HOW TO PREPARE DRY CAT FISH VEGETABLE YAM & SWEET POTATOE PORRIDGE

Nigeria is by far the world’s largest producer of yams, accounting for over 70 percent of the world production according to the Food and Agricultural Organization report. In perspective, the world’s second and third-largest producers of yams are Côte d’Ivoire and Ghana. According to the International Institute of Tropical Agriculture, Nigeria accounted for about 70 percent of the world production amounting to 17 million tonnes from yam cultivation…Well said!


When I was younger, I and my elder brother could eat yam for a whole month nonstop, we ate it then as if its was really going out of Nigeria.
You can boil, fry and roast yam and it will come out very sweet as usual especially the old ones, the new yam are not that sweet just a few of them but when they get dried, the sweetness in them increases.
So over the weekend my kids wanted a sharp food after their vigorous bicycle riding and I quickly prepare this sumptuous mean as a sharp mum 

How to prepare 
 
Ingredients
 
Yam —-1 small tuber
Sweet potatoes —- 3 large ones
Knorr —– 3cubes
Pepper —–to taste
Crayfish —- 2 handful
Onions — big sized
Dry catfish —I used the 3 in the picture below
Salt — a pinch
Palm oil— to your taste too
Vegetable(Ugu and scent leave)– as much as you want.
Water — 2 cups.. you can always add more.
Prep Time– 40- 45 min

So what is so special about this recipe? Continue to read to know why this one is special and very easy to prepare too.
Yam
Sweet potatoes
Peel off the bark of the yam and sweet potatoes, slice to serve-able sizes, wash and set aside.Wash the dry fish, remove all the bones and set aside too. Grind the fresh pepper and a cup of crayfish. I use lots of onions while making most of the dishes because of its healthy benefits.
Dry catfish
Put the sliced yam in a clean pot, then pour water into the pot, add palm oil, fresh onions, fresh pepper, seasoning I use normal Knorr and then a pinch of salt and allow to boil for 10 minutes with low heat to avoid burning.

Allow to boil then add the fish, crayfish,taste for salt and allow to cook for the next ten to fifteen minutes, then you add the sweet potatoes, I added the sweet potatoes last because it gets soft easily.
After 10 minutes you can pierce with a cooking knife to know if the yam and potatoes are soft enough for consumption.
We are almost done with making our porridge, then start stirring everything together with a wooden turner until it thickens into a porridge.
When you are done then you add the vegetables, allow to simmer for 3 minutes .
